The Tastiest Way To Cook a Whole Chicken

 

INGREDIENTS (for 4 people)

I whole Byrnes Free Range Chicken 1.5 kgs
2 small onions cut in half
2 medium carrots peeled and cut in half lengthways
1 whole leek cut into 4 pieces
4 sticks of celery cut in half
1 small swede peeled and cut into large pieces.
8 small potatoes in their skins
Fresh parsley sprigs
Fresh thyme sprigs
2 cloves whole
4 cloves Garlic left whole

METHOD

STEP 1
Put the chicken in a pot, cover with water, bring to the boil and discard the water.

STEP 2
Put all the prepared vegetables, herbs and seasoning into the pot, cover with fresh water and bring to the boil.

STEP 3
Cover the pot, reduce the heat to a slow simmer and cook for 1 hour.

STEP 4

Remove the chicken and cut into portions. Serve in large bowls with the stock and vegetables from the pot. Serve with a chunk of crusty bread or Soda bread.
